Bushcraft & Fishing - Catch and Cook Smoked Fish at the Log Fort Camp
Description
We're back at The Bushcraft Camp where we do a catch and cook on the Campfire. This time we smoked our fresh fish using a smoke box and grill. Our friend Wayne shows you how to clean the Mackerel and prepare it for cooking. It's an easy recipe to follow.
Before that though, we decided to make an update to the Camp and raised the tarp roof, made a wood splitting block and split wood for the log store to stock up ready for the Cold Winter months. We also cooked up some Bacon for lunch! Hope you guys enjoy it - Mike

well guys join us here at the bushcraft camp and dance made a double-decker I remember since before double decker bacon sandwich with HP sauce it is HP we call you brown sauce ketchup which is red sauce yeah does anybody else they have brown sauce what are they call it in America oh good plan is we've got a full day here at cam today lots of little things to do we're gonna raise the ridge of the roof a little bit more and basically at the angles a bit better because it's sagged over the last well year and a bit where we did it is sacked from all the water got a clear all the gunk off it pine needles yeah we've got to fill up and look store it in a bit more get some wood chopped up because I will be coming here in about a month's time is where I come here a little bit more because at the moment I've got so much on that I'm not coming here but in about a month's time I'll be doing much more stuff here so we just basically prepping the camp a bit more and also we've got a catch and cook we've caught up some we recently caught some mackerel back end of bout back into summer we caught some makkal mackerel and we're gonna smoke it this time in a little smoke box with some wood chips in there so stay tuned for that yeah

that's nice and she'll be drinking it yeah
chewing on it well I reckon I think I'll leave these chips soaked now for half an hour or so yeah no more then we'll put min in the smoke box we'll be away so what to do now fires going yeah I'd like to make something make life a little bit easier gonna freeze something in half an hour well look another idea folks let's get out there a bit of elbow grease speed of hard work on the saw gonna be worth it

the reason I want to do this you know see Mike with a round log doing the battening and it rolls and slips and slides along all the way off so we've got a flat piece at the bottom a flat piece on the top driven for stakes in and I'm hoping it'd probably be able to split down there when he does so battening basically a battening block is what we're gonna call that nning base that's what I call it block battening base fingers crossed it works they might make fingers I might not have any of it I know that's the idea yeah it doesn't skid and rolled off you've got a flat surface and still takes I'll sure that's why we flattened it so it wouldn't roll yeah he's left at the bottom flatter you can eat it from this side all that side I think long ways I see idea ahead in my mind it's a button that's just grabbing me a stick I think got a flat one out here as well I know it's long but absolute solid platform to just process wood on yeah the battening block rim works a treat that doesn't go anywhere it's amazing how much with a PT ground how difficult it can be I think that calls for some smoked mackerel is what's on the menu today

cover for it go and check it out really handy so what we're using this is the smoke box guys just so you can see literally silver box with some holes in the top that's about eight and eye holes drilled into the top of it and this is the smoke box so this is where the smoke comes from today we have got ourselves some oak cognac wood chips sounds very pale she doesn't oak cognac and that's just cognac scented oak chips I've soaked them in water for half an hour and now there's no water in there barely any it's just dripping out of the hole so they've absorbed all that water and the reason I put them in water is because they're going to smoke even more they'll absorb that water about any wet wood will smoke so get the wood chips put them in your box ready for that smoky flavor spread them pretty evenly cuz you don't want to overfill it they're gonna smoke all right in fact I'm probably not going to use all of these that'll do so the idea is if you guys have ever made char cloth before it's basically that woods going to get charred and go black but it's going to give off loads of smoke this smoke box is also an amazon guys really cheap I think there's the cheapest one on Amazon I'll put a link in the video description but just so I can show you this is grills gonna go on top of the fire smoke box is gonna go underneath like this start smoking and the mackerel will get be on top the Phil it's a macro that we got it should smoke the Mac on top take a while to smoke probably 10 or 15 minutes or so to get that wood charge but hopefully seeing that start smoking we can get our Mackrell on and then the macro cooks on top obviously from the heat of the fire but it also smokes from the smoke box different way doing anyway [Music]

well we're about to put it on they start the smoke a bit and house heating out well I've got my fill it's done now if you want to see how to debone a mackerel fill it
especially for this check out the next clip of our friend Wayne combin out in the boat where we call some a call and he'll show you exactly how it's done but some lovely mackerel today fresh out the sea beautiful gleaming fish exactly what you want to see far cry from most of the things you see in supermarkets and beautiful should have a lovely lovely clear I like that a lot of color to it as much as possible that's a fresh fish okay we're gonna prep this one for the smoker so personally I don't want to gut this fish because I want it nice and firm what we do get the knife nice and sharp that knife is what we do place it in just this side of the pictoral come in gently till we touch the backbone and then we turn we keep it flat to that backbone and we keep it flat all the way down to the bottom right and where we have a lovely fill it I'll do the other side so remember in just this side of the pectoral fin to come to the backbone don't go in too deep because you'll cut through that back when with a sharp knife and then literally you want to just ease the knife along the edge along the edge until you take that fill it off now to fill it's there one more thing for the smoker you've got buns in that Philip which our person you want to take out and I found the very easiest way of doing it first we have to know where the bones are I'll get that fill it a little rinse now may be easy to see in Omak will fill it like that you've got some bones along the middle there you can feel them with your finger you could pull those out individually I don't do that takes too long and you've got some bones here in the belly cavity and the best way to remove those take the knife they're shallow you can see the belly cavity here just go just above it and take a shallow cut like so that removes all those belly buns and it's only a very thin sliver of fish that you lose and then to take out those buns what end to do turn it round to the head end just literally you want to go one side then the other side so literally just one side
under the camera myself it clearly just one side of those buns you need to want to gently go in an angle and bring it all the way down just close to those bones and then you want to do there's actly the same you can do it from this ending different I never end you like bring it up yes the other side of those bones like so you don't go fully through to fill it though and what that does that gives you a nice piece of fish to grab hold off and then this is the beauty of this you grab hold of it so it'll be slimy so I'm just taking me a bit to grab it but once you grab it like that you literally take that and fill it those bounds straight out website and then they go you left with an absolutely beautiful boneless macro start just make three now that box and we've got the heat of summer flame there as well we can see there the smoke not coming from the fire the smoke is coming are these holes just in here and we know the fish is cooking because you see on the top of the smoke box the moisture and the droplets on the mac or where the juice is coming out just going to turn this one over and see if it's got a nice look at gold smoky color perfect smoked mackerel that is the moment that cool caught by our own hands well officials actually didn't catch it with our hands obviously thanks Wayne for a nice yep very nice and these will be boneless Phillips he split down there great way to do it now require the taste test
did you see if this breaks up absolutely you can take this off the skiing people or you can eat the whole skin as well there we go it brings out that smell in the macro that fresh mackerel fresh mackerel smell smoked mackerel Oh smoke pretty good nice that's the golden color you want any well that's the smoke color that guys it just is falling off I don't want to drop the lot through we forgot to bring the plates with this blue plate the blue picnic bushcraft plates say--but they're hard imagine you can do meat like this is roofs made me have you guys done any beef beef smoked pork smoked lamb smoked what do you smoked no no no tell us I don't tell us what you smoked we get arrested in English for even thinking about it hmm proper proper fish taste that mackerel isn't it absolutely really really fishy taste nice smoked as well hmm that's lovely
yes what you need after a hard day's work at the fort smoking away still guys we've got a bit of a natural game trail here this is actually the position where we if you are a regular watch your tea outdoors me and Dad films and deer some roe deer probably a couple of months ago now that we're running through this directions so we've got the trail cam with us which I'm just on tests at the moment giving it a good test found a really good game trail which is where they're coming through going into another separate woodland and we're following it actually up this way and there's marks there's marks all along him evidence that there's been fear not just there squirrel as well like here there's markings everywhere on the floor this could be deer actually because they're every sort of a couple of feet but it also could be squirrel because it's that time of year where the squirrels for example here are taking these chestnuts and they're burying them so we're not too sure yet and there's so many leaves on the floor it's actually quite hard to read the tracks and I'm not on their expert tracker but there is game Charles basically coming across to our right you can see all the woodland they're still pretty thick grass what we've done with the the trail cam and look if you can see it it looks pretty well blended in up it's like forest camo one this is where we set it up against this really old birch I mean this is look how a basically walk to the bark is it's a pretty old birch tree this one but that goes in really nicely you can't see that at all especially if you're an animal let's see what we can get is a real while wooden and this we've seen a plenty of animals here before I've seen Fox I've seen grey squirrels we've got the birds and buzzards and things like that dad but the other day we saw the the roe deer so there's plenty of animals here haven't seen a badger here before and there's no evidence really of a badger but be nice to get the Fox really I think wouldn't it dad on on on the trail cam so yeah who knows guys we've put the camera out we've got a nice open area where we think animals will naturally come to and graze in because it's nice and you know there's so much grass here so well who knows we will see they know where they're going they follow the game trails they follow the easiest route and what that's what we've done we're no expert trackers we'll always admit that and we've got to get out here will change second yeah so we've been using this at badges rest to good effect and we've had some some stuff on it which you'll see in a future episode but just get off the sensor cameras clean so we've got eight seconds run for it run away and this is a weatherproof but I'll talk about it in another video guys so let's go Santi setting the Claymore it is tired it is a tough it's gonna totally start slow jumper if you ever get onto my hands guys that is the smallest toad I think I've ever seen I saw a frog here the other day when I was within with it we're then then if you guys watch that video as well autumn is certainly here I mean you can't see it in the trees but you can feel it in the air can't you dad oh yeah the trees off the birch trees are started to go now which is quite nice to see guys thanks so much for watching the video we really do appreciate it I hope you've enjoyed coming along on the adventure and we've had some great smoked fish we've had coffee tea deserve is lovely milky tea bacon bacon Sonny's year we put the trail cam out it's been a great day out in the woods and we have actually spent pretty much a full day here just enjoying yeah a lot of people don't realize how tough it is to film as well at the same time and try and get with the camera angles and things like that but hopefully you've enjoyed it yeah
