welcome to totally awesome outdoors show I'm here Hampshire I couldn't resist popping in I just had a shoot up here at whittled in Hampshire and they've got apparently I've really tasty games you just go and see what they've got and see if we get some tips on actually how they prepare this tube and what's in it should be interesting so tell us what you've got

pheasant rabbit yeah duck pheasant rabbit venison and some wood pigeon yeah bottle of red wine that's not a bad thing plenty of stock now you never bit a bit of red wine some good game now how do you go about preparing I just have this a little bit how you do that you did you cook them individually in his I've only got a certain songs pop yeah then I will put the rabbit scene and cook them long and slow yes take them out what it looks like there's an idea on time for cooking you know in two three hours sometimes it's just not sudden meat completely disintegrates it's still on the bone yes you can then pick it out put it on the board let it cool a little bit pick all the bone out because it was rabbit you got small ribs and your long bone so pick all about out put all the meat back in a pot yes take the stock out and then strain it skim it so you got no nasty bits or skull or anything so that rabbits the first thing to do it's just you could be at any stage it's just the way that that I wound up doing it yeah and then the birds again same sort of thing if you've got any that you think you might have little bit breast bone left in or anything just look them long and slow let them create their own stock yes then again strain in Cygnus stocks there's no bits or anything floating around on the top same process right the way through then put all you stop back together yes you can fry off your onions and celery tomatoes things like that put that into your stock some softened a little bit we bottle of wine yeah

herbs and this case of coriander and parsley yes yes call it a man's true yeah military and social yes yes and then how long in us do we at least do it all together that was going all day yesterday so a slow cooker big big yes you know big catering pot yeah and just a lot once it's come up to the goodness first boil just turn it right down lighter simmer put the lid on it and just let it is this a traditional sort of shooters steward you call this is or did some unusually you've done yourself it's probably more or less additional side yes normally I would've just done a venison stew and I got introduced to the concept putting everything in it yeah yeah by local chat that does a fokker at Four Seasons Hotel oh yes and he did one for the hunt on New Year's Day and and I just thought yeah that's the way to go it's good it's absolutely lovely hearty warming and not of cold wet diets just what you need absolutely yeah but can you keep that can you keep that one so any today and that's it left to go home some in the fridge maybe free some down it'll freeze every yeah you've got some old ice cream tubs you'll take away tubs if you want to do some like little proportions bang it in the freezer and then you've got a meal for another day and then you've got that in this special heat it's just you know an ex-army Norwegian which you can find you know on the internet you just type in ex-army yeah Norwegian I don't want to keep you HOT folks that when you open do it steam now that would be that still be hot tonight oh really these these things are fabulous you know sorts when's he quit sort of thing for at first army surplus job in and they're the ticket and it keep things hot and cold things cold it's you know yeah you're absolutely perfect

obviously with with that there's there's wild mushrooms in there as well which you're not sufficient thing which sort of like red meat lot venison the only thing with that is it evened out oh wait if you if you don't know what the mushroom is leave it well alone there's some flipping over ones out there there's some real basic ones like your birch Bellator's your sex things like that that are very very obvious to identify yes and that's going what I stick to through much and they're lovely soft not meaty mushroom that will that will cook well you can dry them and store them for the following year as well which is nice thing about it and how did the shooting go today slide it's nowhere today yeah a lot slower hey it's getting towards the end of the year we're just starting to roam a little bit and one Guinea fell yeah yes yeah we had a little bit of fun with Richard on that one but now you put those down what's your story on those how do those will put down partly for a bit of fun sure as an alarm bird because around the pain anybody walks in there those things far up make a hell of a round yes I mean they really do make a right rail and you know if somebody was lucky enough to bag one then they've got one you know yeah ya know to add on interest and you know people see them flying boy what do they eat like when I've had them life being somewhere between I suppose a slightly gaily tricking somewhere between a chicken and a turkey yes yeah you know but they ate very well you know just a question of knocking back the cooking times a little bit yeah it's not a big bird laughs so they cook faster yes so it'll be a little bit more spare at a time and the heat light you maybe you would have pheasant this is the first guinea fowl that I've ever shot on the last Drive and I didn't expect to shoot it at all yeah so follow that lad you were right last time that's so far today I've shot a couple of pigeons and all of a sudden you are just heard forward which is the cry I go here from the beaches when there through the woods kind of birds to be flush down yet and then I think someone shouted guinea fowl and this little chap flew out that are good enough height to were to shoot it on the first shot top battle and is there a difference male and female and these I don't know but note I rang my male female difference is what right we don't know the often going after that yes but yeah I'm pretty impressed with that I know use a few trout fishing feathers in here yeah travels gonna have basically make some fly yeah yes cute route flies there yeah that's unusually are you so thanks for that you
