Baking Homemade Sourdough Bread in a Clay Oven in the Forest

My wife and I bake her sourdough bread in the earthen oven (made of clay, sand and straw, in the forest beside the log cabin.

This was before I figured out the heat issues with the clay oven, so we baked four loaves - two 50% wholewheat and 50% white flour and two 100% whole wheat - by keeping the wooden door open and feeding the fire to keep it burning hot enough to get the inside temperature up around 500 degrees.

{\fs14}???????????????? {\fs14}so if you were counting that was the fourth loaf {\fs14}??????????? {\fs14}that was a book to come out of the oven {\fs14}??????50%?? {\fs14}what we made is 2 50% white {\fs14}?50%????? {\fs14}and 50% whole-wheat loaves {\fs14}????100%????? {\fs14}and 2 100% whole wheat loaves {\fs14}?????????yis(???) {\fs14}so that's sourdough so there's no yis {\fs14}??????????? {\fs14}so it's basically just salt flour and water {\fs14}????????????? {\fs14}so if you want to follow this recipe exactly 12 00:07:14,260 --> 00:07:16,719 {\fs14}???????????? {\fs14}click on the link in the description below the video {\fs14}???????? {\fs14}or in the pink comment {\fs14}???????? {\fs14}I'll give you a link to the website {\fs14}???????????? {\fs14}where we have the full recipe for the bread there {\fs14}???????? {\fs14}and in a future upcoming video {\fs14}??????????? {\fs14}we'll show the whole process right {\fs14}???????? {\fs14}from creating the e-starter to finishing off the bread {\fs14}?????????????? {\fs14}I would say this has been my biggest mistake {\fs14}????????????? {\fs14}or temporary setback so far here at the cabin {\fs14}????????????????? {\fs14}this oven like I said in the last video {\fs14}????? {\fs14}just didn't quite work out the way {\fs14}???????????? {\fs14}I intended the workaround is that we have to keep a fire going in it {\fs14}?????????? {\fs14}to keep the temperature up hot enough to bake something {\fs14}???????? {\fs14}like bread or to make pizza {\fs14}??????????????? {\fs14}other things that are slow roasted {\fs14}???????????? {\fs14}like a pulled pork roast or something like that {\fs14}????????? {\fs14}or beef roast or some upcoming meat roasted {\fs14}??????? {\fs14}I'm going to do in here {\fs14}????????? {\fs14}like goose and duck and venison {\fs14}?????????? {\fs14}and turkey probably well turkey and stuff like that {\fs14}?????????? {\fs14}the oven temperature is hot enough for that {\fs14}????????? {\fs14}so what typically I will be doing starting the fire {\fs14}???????? {\fs14}heating the whole unit up {\fs14}????? {\fs14}and then pulling the fire out {\fs14}????? {\fs14}and shutting the door {\fs14}??????? {\fs14}and letting the heat from the cob cook the food {\fs14}???? {\fs14}the issue I think partially is that {\fs14}?????????? {\fs14}I'm not getting a hot enough fire in there {\fs14}???????????????? {\fs14}and that there's still too much moisture in the floor in particular {\fs14}??????????????????????? {\fs14}and it's cool in the oven down too quickly {\fs14}???????? {\fs14}so I think by removing this roof {\fs14}??? {\fs14}raising it up

{\fs14}???????????????? {\fs14}I can get a hotter fire drier fire wood {\fs14}??????????? {\fs14}solid maple said it burns nice and hot {\fs14}?????????????? {\fs14}we've oak and cook things are much quicker {\fs14}?????????????? {\fs14}and keep that heat in the oven from that much longer {\fs14}???????????? {\fs14}so we'll see it might not have to add more charcoal to the oven itself {\fs14}?????????? {\fs14}but at the very least I do need to replace this roof {\fs14}??????? {\fs14}no, I don't think I'll do it this year {\fs14}?????????????? {\fs14}because we had close to freezing temperatures the other night {\fs14}??????? {\fs14}we have a really warm week again {\fs14}?????9???????? {\fs14}this is mid-september now and temperatures are getting {\fs14}20??????30??? {\fs14}back up into the mid 20s and into the 30s with the humidex {\fs14}?????????????? {\fs14}but soon enough I would say in another week from now {\fs14}???????? {\fs14}we'll get close to frost temperatures to freezing {\fs14}???0?????32??? {\fs14}zero Celsius or 32 fahrenheit {\fs14}???????????????? {\fs14}and I'm not going to be cooking much in this oven {\fs14}??????????????? {\fs14}I'll cook some this fall all the way up till probably Christmas {\fs14}???????????? {\fs14}but not often if it's too cold {\fs14}????????? {\fs14}the sek I think if I heat this thing up too quickly {\fs14}??????????????????????? {\fs14}and it's too cold outside I think I just might crack it and ruin it {\fs14}??????????? {\fs14}so soon enough the cooking is mainly going to be done inside {\fs14}???????? {\fs14}on the stove the wood stove {\fs14}?????????????? {\fs14}and all my grilling will continue to be on this barbecue {\fs14}?????????? {\fs14}which I'll do year round {\fs14}?????????? {\fs14}people asked about closing this kitchen end {\fs14}??? {\fs14}for cooking in the winter {\fs14}????????????????? {\fs14}but it's Canada at least I barbecue all winter long {\fs14}?????????30? {\fs14}I don't care if it's minus 30 {\fs14}????????? {\fs14}I'll still fire up the grill just get a little bit more heat to it {\fs14}????????? {\fs14}and cook my steak is a much preferred cooking steak here {\fs14}???????????? {\fs14}out on the barbecue then and in the oven {\fs14}?????????? {\fs14}so that's what I'll continue to do {\fs14}?????? {\fs14}and make this modification {\fs14}????? {\fs14}in the spring in the meantime {\fs14}????????? {\fs14}I think what I'll do also is leave this kitchen the way {\fs14}??????????? {\fs14}it is, it's functional enough the counters {\fs14}??????? {\fs14}I'll probably dress them up a little bit {\fs14}??????????? {\fs14}but I might not get around to adding the kitchen cupboards {\fs14}?????????? {\fs14}and getting a more solid floor {\fs14}?????????????????? {\fs14}I'll continue to add sand just to keep it level and stuff {\fs14}????????????? {\fs14}but I don't think I'll pack it down or anything yet {\fs14}????????? {\fs14}wait till spring let everything shift around {\fs14}????? {\fs14}and then come back to the kitchen {\fs14}??????????????????? {\fs14}it's like I said aesthetically I'm not happy with this at all right now {\fs14}????????? {\fs14}I do want the counters cleaned up {\fs14}????????????????? {\fs14}I want the stone put on the barbecue to make that look nicer {\fs14}???????? {\fs14}just for my own pleasure I guess {\fs14}??????????????? {\fs14}but I've got these other projects I need to get going {\fs14}?????????????? {\fs14}so today I'm actually clearing this space for the bath house {\fs14}?????????? {\fs14}which I'm really excited to get done {\fs14}????????? {\fs14}and feel it's like it's an essential building {\fs14}????????????? {\fs14}something I need to have to make life comfortable here {\fs14}????????????????? {\fs14}so I'm gonna move on to that quickly plus another woodshed as well {\fs14}????????? {\fs14}just forstoring the firewood to keep that dry {\fs14}??????????? {\fs14}something off the turf at all {\fs14}?????????? {\fs14}over like I have been doing especially all winter {\fs14}???????????? {\fs14}it's a pain having tarps on your wood {\fs14}???????????????? {\fs14}gets 2 feet of snow on and you have to keep removing that {\fs14}?????????????? {\fs14}so a few changes to do before the snow flies {\fs14}???????? {\fs14}so still a lot of work to do {\fs14}??????? {\fs14}a little bit of urgency {\fs14}??????????? {\fs14}before the ground starts freezing the snow starts falling {\fs14}????????? {\fs14}so I have to continue to work {\fs14}????????????? {\fs14}also what I'm gonna do today is take down some of the dead trees {\fs14}?????????????? {\fs14}and I'm noticing around the cabin within walking distance {\fs14}?????????? {\fs14}and I know some of its going to be good for firewood {\fs14}????????? {\fs14}and also some of its going to be good for lumber {\fs14}????????????? {\fs14}so these are the things I'm doing to prepare for the winter {\fs14}???9???????? {\fs14}now this is mid-september and according to the news {\fs14}?????????????????? {\fs14}there is a major major hurricane about to hit the southeast coast {\fs14}????????????????? {\fs14}so Virginia and the Carolinas {\fs14}???????? {\fs14}so we should everybody well down there {\fs14}??????????? {\fs14}and hope everybody's prepared for it {\fs14}???????????? {\fs14}apparently over a million people are getting evacuated {\fs14}????????? {\fs14}or being encouraged to leave the area {\fs14}???????????? {\fs14}and it's supposed to be one of the major storms {\fs14}?????????? {\fs14}may be the biggest storm to ever hit the area {\fs14}???????????????????? {\fs14}so fuel for everybody there hope you make through may get through okay {\fs14}???????????? {\fs14}and your family members are safe and healthy {\fs14}???????????????? {\fs14}and you get back to your normal lives quickly after this disaster {\fs14}????????????? {\fs14}like I said, I hope you're also prepared {\fs14}?????????? {\fs14}I hope people are looking at this as a reminder 125 00:12:15,920 --> 00:12:17,690 {\fs14}????????????? {\fs14}that they should be prepared for emergencies {\fs14}???????????? {\fs14}I can't speak for what you need down in those areas {\fs14}?????????????? {\fs14}but I know for myself around here {\fs14}???????? {\fs14}the essentials like water enough cash on hand to make it through {\fs14}?????????????? {\fs14}you know probably a week at least {\fs14}??????????????????????????????? {\fs14}as cash is going to be king in that situation {\fs14}???????? {\fs14}a fuel for your vehicles, enough fuel on hand, too {\fs14}??????? {\fs14}maybe you're going to be stuck in traffic {\fs14}???????? {\fs14}egress routes outside of the major urban centers {\fs14}?????? {\fs14}are going to be packs all {\fs14}?????????? {\fs14}and you'll be sitting in traf fic for a long time {\fs14}??????????????? {\fs14}so fuel spare your all water and food and things like that {\fs14}?????????? {\fs14}the obvious things cell phone maybe a power pack {\fs14}???????? {\fs14}so you can recharge your cell phones {\fs14}??????? {\fs14}so you can stay in contact with people {\fs14}????????? {\fs14}and just all the things like that {\fs14}??????????? {\fs14}you take for granted {\fs14}?????????????????? {\fs14}and just think what could you not do without for three or five days {\fs14}????????????
