Fresh Bread Mushrooms And Caribou On Twig Fired Camp Stove

Connie once again shows her skills at cooking up a delicious meal while out in the woods. We are having steam baked bread, wild foraged mushrooms and caribou backstrap all cooked on wood fired twig trail stoves. This is another video in the playlist called "Camp Cooking With Connie". Enjoy.

Steam Baked Bread Recipe

For the mix:

1 cup (125 grams) flour

1 1/2 teaspoons (6 grams) baking powder

1/2 teaspoon (2 grams) salt

3 tablespoons (16 grams) milk powder

2 tablespoons (24 grams) sugar

2 tablespoons (30 ml) vegetable oil

To prepare bread

1/2 cup (120 ml) water

In a medium bowl whisk together the flour, baking powder, salt, milk powder and sugar

then drizzle in the oil. Cut the oil in using two knives like scissors while stirring occasionally to evenly incorporate the oil into the dry ingredients.

When you are ready to make the bread, pour the mix into a small bowl and stir in scant 1/2 cup of water. Drop your steamer in a 2 quart kettle and line the steamer with foil. Place entire dough ball on foil lined steamer. add water to kettle to just below the streamer's floor level. Bring water to a boil and then steam bake for 20 minutes. Serve when done.

P.S. If you have a smaller pot to bake in then be sure and adjust the recipe volume accordingly.

RHUBARB RASPBERRY JAM RECIPE

2 1/2 C rhubarb - cut small

2 1/2 C raspberries

3 C sugar

1 3 ounce package of red gelatin (raspberry or cherry)

Combine the first three ingredients and let sit about 1 hour to draw juices from fruit. Boil together, stirring frequently to prevent scorching about 20 minutes or until thick.

Add

one 3 ounce package red gelatin (raspberry or cherry)

Stir until dissolved. Cook 3 - 5 minutes longer. Pour into sterilized jars. Seal and process 5 minutes in a boiling water bath.

HOMEMADE CAJUN SEASONING RECIPE

In the below recipe "parts" mean what ever volume of measurement you need to use for the amount of finished recipe you want to make. In other words my amount that I normally make is small so I substitute the word "part" for teaspoons.

Ingredients

2 1/2 parts paprika

2 parts salt

2 parts garlic powder

1 part black pepper

1 part onion powder

1 part cayenne pepper

1 part dried oregano

1 part dried thyme

Combine all ingredients thoroughly.

Store in an airtight jar

Use like you would salt

This is delicious on meat, chicken, mushrooms, seafood, casseroles or vegetables.
