okay so I don't need to really elaborate on this fast beef jerky goes I mean I've made quite a few videos about it but it's just a simple fast turkey the type of meat you want to use is whatever you got okay there's no problems there what I like to do is cut them at about 1/8 of an inch thin I don't want to go any thicker than that because you know it takes longer to cook and well to dehydrate I mean and it's much easier to chew once it's done but of course it's going to work thicker you want to avoid as much fat as you can because that will eventually spoil your meat now this is a fast jerky good for maybe a week or two depending on winter weather conditions I'm about 2 and a half or 3 feet from the meat right so there's some very light light light heat coming going up and the smoke now you don't I made this cover here just to give you an example of what you could do today I wouldn't really need it but it's going to be a plus what this cover does is three things first it's going to capture the smoke and the heat somewhat a little bit more when it goes up second is going to keep the flies off your meat and third if ever reigns is going to keep the rain off of it as well now obviously if it's a downpour you're going to need to adjust that and put it way much thicker because that protects from the rain going on your meat and on your fire now the way it's this setup right now should take about three hours you don't want to have real big flames you just want some nice smoke and just a little bit of heat at the top it should take about three hours now that's just a rough estimate because it always depends on weather depends on the wind you see sometimes like right now it goes right straight but the wind comes and takes the heat away so it plays it's going to play I'm not going to explain our marinade we have a homemade marinade Josie has a video on that so he just check out her cooking channel she's got a video and a blog so you're interested in that you just check it out in the links below all right so just to give you a little closer look and got some all around mmm I still got my little chain there because I'm gonna be having some coffee of course but uh know if you can see under there probably hard to see of course there's holes everywhere but that's okay it still captures some of it to give you an example if you really really want it to work you need to close it all up completely and of course you don't want them too low because you don't want to catch on fire right so when it's cooked we'll take a look a so now usually this is the fast jerky because I don't have 24 hours to wait but keeping your mind the longer it takes to cure the longer it's going to last so this is not your typical 24 hour cure if you can just you know let it dehydrate with the Sun and salt or have a bigger bigger rack a bigger tepee style rack and it's much higher and there's hardly any heat excuse me

that'll take a 24 hour cure minimum and that's going to last a long time months but like that it's just for a quick demonstration it's still June right now but it's still pretty cold so I said why not take the the advantage of this weather and make some jerky hadn't done son done some in a while and I seem that I seem that I'm not able to talk today so but our stream is running great beautiful water just give you we're almost there unveil the present we're almost done give her a last half-hour
